D.O. stands for Designation of Origin: an official seal guaranteeing that a product comes from a specific geographical area and is made following strict standards perfected over generations. It's the difference between any old ham and acorn-fed ham from Extremadura, or between any blue cheese and an Asturian Cabrales. Here we only work with D.O. products when the flavour earns it.
